    I'm afraid this idea comes from one of the You books. . . so it won't be news to you, but I just love steel cut oatmeal with some dried fruit (usually cranberries) mixed in!  

    Another great option is a large smoothie -- something with bananas (ca. 1), frozen berries (ca. 1 c), yogurt (small container) and apple juice (ca. 1/2 cup).  This will probably fill two glasses, but is a great way to start my day!

    I agree Jenny -- I too usually start the day with a Mango / Peach Smoothie -- frozen Mango / peach / a little honey misxd in with a scoop of protein powder and a half cup plain yougurt.  I sometimes sprinkle the top of the smoothie with canola or oats, or if wish fresh fruits.    I love smoothies.  Sometimes I'll even mix a little Greens First.  It's a great way to stay healty and also lose a few pounds.

    Veggie omelette

    1/2 cup egg substitute

    1/4 cup spinach

    1/4 cup mushrooms

    1 wedge laughing cow light french onion cheese

    directions:

    Spray a non-stick pan with cooking spray, 1/2 tbsp olive oil,  finely chop spinach and mushrooms saute in pan, once cooked add egg substitute, flip when set cut up cheese wedge place on egg fold over.  serve while hot.

    This sounds so odd, but I PROMISE that it's delicious. 

    Green godess smoothie:

    I large handful (or two) of spinach

    1 frozen banana cut up

    a few ice cubes

    1 tbl peanut butter-natural

    vanilla soy milk

    blend in blender and enjoy!

    Mine is also with spinach, I call it    POPEYES smoothie

    Spinach and cucumber chopped

    Plain greek yogurt

    Banana

    Almonds

    Frozen strawberrys or blueberrys

    You can add sweetners if you want but the fruit was enough for me.  Also add your desired amounts of each ingredient.

    Coconut milk

    I love this smoothie recipe and find that it gives me lots of energy (plus its delicious):

    six or seven ice cubes

    about 1/4 cup orange juice (should almost cover ice cubes)

    a couple spoonfuls organic fat-free yogurt

    a handful of blueberries

    about half of a medium sized banana

    I also like to add a little bit of honey and protein powder as well. Enjoy! Laughing

    My husband and I eat the most healthy breakfast and it sets us up for the day.  I will put Go Lean (not the crunch, just the regular) in the bowl with some healthy granola. Then I add some flaxseed, chia seed, cinnamon, wheat germ, english walnuts, dried blueberries, fresh banana. All of those are small amounts.  Then we use Silk Vanilla Almond milk (yum). I don't think we could do any better than this!!

    Egg white omlette.  I sautee red peppers, onion and spinich and 1/2 cup egg whites.

    I'm almost glad I'm lactose intolerant, because I love almond milk. I use it frequently for bowls of the plain Kashi cereal with either a banana and cinnamon in it, or strawberries, and I usually have tea with that. Another healthy favorite is a protein shake made with almond milk and toast with peanut butter, banana and cinnamon sprinkled on top. Also on the list would be two boiled eggs with a piece of toast and vegetarian sausage. I don't recommend ever having juice at breakfast because it's so sugary. Also, the toast is best if it's wheat/whole grain.

    On the week day I will have : Wholegrain porridge cooked with Low fat milk, scoopful of goji berries plus some prunes.  Once it is nicely cooked, I will place it into a bowl - topped with 2 tbsp LSA (grounded Linseed + Sunflower + Almond seeds) and sprinkle with cinnamon, and  2 slices of canned fruit (peaches or apricot).  yum yum.  Dandelion tea or black coffee (no sugar) after. 

    On the weekends - Fritata with mushrooms and tomatoes, wholegrain toast on the side, thin spread of butter, together with white coffee, no sugar.

    We all know how healthy steel cut oatmeal is for breakfast. But who has the time to wait 45 minutes for it to cook? Before you go to bed, put one cup of steel cut oats and four cups of water in the CROCKPOT!! Turn it on low and by breakfast it is perfect. LucyBeth

    love veggie frittatas in the morning, so i make mine easy using broccoli slaw premade. lightly saute onions in coconut oil, or olive, add onions and the slaw. cover and cook until how you want it crunch wise, add two eggs and either scramble or cook in oven until set. toss feta or parmesan cheese on top ! If i have other leftover veggies from dinner, i will add those in too after the slaw is al dente. I work in a bed and breakfast, and altho most of my guests prefer things not so veggie, occassionally i will serve this dish and people do love it. you can add more eggs with milk and cheeses for a more eggy dish, but for me i prefer lots of veggys with my two eggs! plus i get extra servings of the green stuff...
