Fall means it’s the season of squash. There’s butternut squash, pattypan squash, acorn squash- and they’re all equally delicious and comforting in the fall season. Walk into any grocery store, and you’ll find a plethora of squash on display. Not only is squash delicious, but it’s also good for you, too.

Squash is high in vitamin A, B6, and C and rich in magnesium. My favorite ways to eat squash when the weather gets cold is in the form of a soup or roasted in the oven. But there are endless ways to enjoy it. Here are a few recipes with butternut squash that you should consider adding to your cooking list this fall:

The sweetness of butternut squash and the creaminess of risotto makes this a fantastic dish. And all you need is an instant pot, making this a great one-pot meal.

Just because the weather gets colder doesn’t mean you have to say goodbye to light and delicious salads. Adding roasted squash to a salad is a great way to make it more hearty but still have notes of summertime.

Although squash is typically used in savory dishes, when combined with something sweet, it makes for a delicious sweet treat. And if you’ve never tried adding butternut squash to your pancakes, you’re seriously missing out.

Combining butternut squash with beans is the best way to eat a Mexican inspired dish in the fall. And squash is more nutritious than rice, and treating the squash like it’s a boat is just way more fun.

Butternut Squash Chili

Okay, I liked- soup and chili are two things I survive off of in fall. This butternut squash chili is the perfect twist on your traditional chili (but even better, if you ask me).

Butternut Squash Hummus

Long gone are the days of plain old chickpea hummus, you can now find hummus in just about any flavor. Butternut squash hummus is creamy with a bit of a sweet note that tastes delicious with crackers and cheese.
