Low in calories but packed with fiber and vitamins C and B-6, zucchini can be enjoyed raw or cooked. Slice it into rounds and roast or steam. You can even grate and cook into sweet bread or even oatmeal — just add banana, vanilla, and cinnamon to the mix. Another fun idea: spiralize raw zucchini into ribbons to make “zoodles,” a low-carb pasta alternative. (You can do the same with spaghetti squash!)
