While Labor Day Weekend is often touted as the end of summer, we at YouBeauty are of the belief that summer is going to last until December this year. (Thanks, el Niño?) That means that we should probably still keep eating healthy on the off chance we have to break out the bikini bod come New Year’s Eve. Fortunately, staying healthy when there’s grilling involved is easier than it seems. We teamed up with on-demand healthy food service Indie Fresh and Chef Akhtar Nawab to create a full service menu for your LDW, complete with side salad, veggies, and of course, a burger.

Paleo Bison Burger
–Lean, ground bison meat. Most local grocery stores will have it!
–English Muffins
–Lettuce
–Tomato

Directions
Add your bison to a bowl and season with salt and pepper. Combine it well until smooth and homogenous, then shape into 5 oz burger patties and keep chilled. Heat the BBQ grill and add your seasoned burgers. Wait for the sizzle! While they’re cooking, toast your English Muffins. Cook the burgers to desired doneness. Chef Akhtar reminds medium, about three minutes per side. Finish with your lettuce and tomato to garnish!

Gluten Free/Dairy Free 1000-Island Salad Dressing
–1 egg yolk
–1/2 cup olive oil
–1 tomato
–5 pc cornichons
–2 tbs cornichon liquid
–1 tbs dijon mustard

Directions
Time to make the dressing while the burger is cooking! Add the egg yolk, cornichon liquid, tomato, and dijon to a food processor. Start the motor and puree, slowly begin to add the olive oil until it begins to look creamy. Add the cornichons at the last minute and they’ll remain in small pieces.

Grilled Mushroom Salad
–3 oz oyster mushrooms
–2 tbs olive oil
–6 oz salad greens (arugula, romaine, red oak lettuce, green leaf lettuce)
–1 tbs roasted pine nuts

Directions
Heat the olive oil in a pan and add mushrooms. Cook slowly until well caramelized, about 8 minutes, stirring occasionally. We’re almost done! Now plate your BBQ, toss salad in a bowl with the dressing and add the roasted oyster mushrooms. Dress your English muffin in your gluten free dressing and add that sizzling burger, lettuce and tomatoes. Enjoy!
